banana is not kept in cold storage. it leads to chilling injury and degrade sthe banana quality.

it depends upon your marketing/transport facilitaion time. For localized no need, but for remote mature green bananas have to be transported/stored at a temperature of 13-14º C (56-58°F) in cold storage with 90-95% relative humidity under controlled atmospheric conditions to prevent them from ripening and increase their shelf life.and then to banana ripening rooms, with optimum temperature of 15-20°C (59-68°F), before they reach the market for sale.
Harvested green Bananas can be stored for up to 3 weeks in ethylene-free air or up to 6 weeks in a controlled atmosphere at 14°C.

Dear Madam,

My query is regarding the Cut to Cool Period ?

For example: Suppose i had harvested the banana bunch at morning 9:00 am (this is cut time) and this is process and pack in the box up to 11:00 am and this box was put in cold storage at 9:00 pm (this is cool time) then this box cut to cool period is 12 hrs.

So my question is that 12 hrs is OK for banana (in relation to self life and riping issue) technically or it should be less then 12 hrs, if less then 12 hrs then how much ?
