A rose is a perennial plant of the genus Rosa, within the family Rosaceae. There are over 100 species. They form a group of erect shrubs, and climbing or trailing plants, with stems that are often armed with sharp prickles. Flowers are large and showy, in a number of colours from white through yellows and reds.
Rose petals are used mostly but the hips, root bark, seeds and leaves are used for medicinal purposes.
Rose perfumes are made from rose oil, also called attar of roses, which is a mixture of volatile essential oils obtained by steam-distilling the crushed petals of roses, a process first developed in Persiaand Bulgaria. Rose water is a by-product of this process.
Rose water has a very distinctive flavour and is used heavily in Iranian cuisine—especially in sweets.
