Dear Sir,

We are here preparing Instant Chappathi, Puri and Appalam also through machine work. We undergone the manufacturing of Chappathi, as the result we got our product sour after freezing it. We made a another work of packing the chappathi in Half-cook, this work made the chappathi ROUGH (hard), while and after cooking it.


We preparing the Chappathi with the contents as follows

Whole wheat - 1Kg
RO Water - 300ml
Refined Oil - 100ml
Salt - 10gm

Chappathi Diameter 8''(inches),
Weight 50gm (per piece)

We want your suggestions to overcome this problems.

try to make the small batches and do not keep the dough for long time as it starts fermenting and hence the sourness develops also try to lower the water content change the thickness of the flour hope this may help you
