I have built a 30 ton sugar cane mill to make Jaggery, and Khansari sugar. The mill is in South Africa. Richards Bay.
I am having problems getting Jaggery to set solid.

I am looking for a consultant or to employ 2 qualified Jaggery technicians here in South Africa

Are you not using enough calcium hydroxide? If there is enough calcium you have a distant reading thermometer and finish the process when the temperature s optimum. The sugar concentration can be controlled better by a thermometer as the sugar boiling temperature is related to the brix (total soluble solid) percentage.Too much calcium will make too hard and to less moisture and/or calcium will make it soft. This is not a difficult job. You need not waste money for technicians. Please send me an email and after a few correspondence I can guide you how to solve the problem. Regards and best wishes.

Sir,
Pl let us know complet deail analysis of Suger cane Juice,
Every 100 kg cane what is quantity of Juic by weight and by volume,what is sugure Brix.(suger % by brixo meter. Is juice is salty, what is density, what is Ph. ,Colure Etc. so we can decide process changes are addition of certain chemicals.
Can Provide 2 Tencians form INDIA (Maharshtra state,From Kholapur were Jagery is produce in good quantity. and Best grade in India.
Provide all details and then can give suggestion.
