How can I preserve fresh Amla Juice, without heating

Can any one guide me, How can I preserve fresh Amla Juice, without heating. I have 2 to 3 metthods, one is adding 1% citric acid n 1% KMS , other is by heating upto 60 degree celcious ans adding sodium benzoate n citric acid 1% each, Can i add dm water , upto 30% to the freshly extracted Amla juice, how do i preserve this?? , Plz help me

Dear pushp'a',
Sodium benzote can work as fungistatic and bacteristatic agent even if dont heat the juice.you can very well add the water as you like. the preservative will not bother about whether it is diluted nor concentrated one. it will simply preserve the thing to which you add it. heating in general kills the bacteria which in turn enhance the time and quality of preservation.

Is it a commercial project for amla juice ?
If it is a large project and if you can distribute the product in cold chain, I can suggest a new technology, without heat treatment and without preservatives. It is expensive but feasible if the product is premium.

the dissolved salts won't affect the preserving quality. so you can add filter water / mineral water.

Is there anything else abt preserving Amla juice, At presenting me preserving Aloevera juice also in same way, heating, sodium benzoate 1% , citric acid !%
