Help regarding seafood processing !

Hello,

I'm Vinodh from Chennai.I export complete range of seafood items to foreign countries.Now I want to introduce cooked seafood items with a brand name.I was told that cooked seafood will not be hygienic after 1 week since It has water content in it. But I've seen foreign imported tinned cooked seafoods given 3-6 months validity..How is that possible?

I want help from food processing consultants from Chennai.I also need packaging companies to pack my product.Interested may contact me through

i went threw your article and is your product frozen,or chilled what group it comes
in case of canned foods it is commercially steriale for more than 2 years as the shelf life changes according to the processing operation
i am placed in kerala and so iwill be pleased to help you as much as i can
i have got arount 7 years experience in seafood/canning processing
 

Dear Anilsasi,

Let me explain you how the product will be.The prawn or fish is bought raw and cooked like we do normally in our home..It may be gravy or any other traditional dish..I want the prepared dish to be hygenic and consumable for atleast 3 months.I'm sure that there is a way..Also I need to know how to re-use or recycle the product after 3 months.
