Colour of Potato changed to Green

I seek a privilege to know about sudden change of colour of potato into green.

About 15 days ago, we unearthed the cultivated potato in our kitchen garden. Absolutely we did not use any chemical/fertilizer to grow potato except the dry cow dung mixed in the earth. But the potato got turned from 'off white' colour to 'green'.

We need to know what could be the reason for this change of colour?
Is this safe to eat these potato?

Potato will turn green when exposed to sun, this is due to formation of chlorophyll in that particular area to aid photosynthesis. Usually the green potato should not be consumed.
