Vegetables intercrop in Coconut

I own a 15 acre coconut farm and hope to lay down a drip irrigation network in the entire area, at one lateral line every 5 feet and a inline dripper every 50cm. I understand I would be able to cultivate shade loving vegetables, greens and herbs in such a set up. My farm is situated in Villupuram district of Tamilnadu.
What sort of crops should I raise and what are the marketing options available.
The coconut trees are 20 years old and they are planted 25ft apart in a square formation.

Spices shall be a good option to grow in such a set up. Pepper shall do well. Banana, arecanut plantations shall also do well. Turmeric is one other option.
