Gundruk is produced from green vegetable leaves from Cauliflower, Mustard and some others through fermentation and drying process. Generally the stalk and surrounding thick, green leaves are discarded. No chemicals are used. It is a natural product with great appeal and demand. It is an extremely healthful food. They are served as a side dish with the main meal and also used as an appetiser. Gundruk is an important source of minerals. Ideal to be started as a small scale industry. Low investment required. Training for key operational personnel available.
